Tacohuaco

This recipe is one of our favorite fancy breakfasts. It has many ingredients, but it’s not so difficult and long to cook. Dutch baby together with Café de olla and our Good vibes playlist is the recipe for a perfect slow Sunday.

Ingredients

Yields 2 portions

  1. 40 g of wholewheat flour
  2. 40 g of all-purpose flour
  3. 1 g of ground cinnamon
  4. 1 g of ground cardamom
  5. 2 g of fine salt
  6. 4 eggs
  7. 180 g of milk
  8. 20 g of maple syrup
  9. 5 g of o vanilla extract
  10. 3 tablespoons of butter
  11. 1 apple
  12. more maple syrup
    optional, for serving
  13. berries
    optional, for serving

You will need

  1. medium-size cast iron skillet
  2. oven
  3. mixer

Directions

  1. Preheat oven to 220 ˚C.
  2. In a medium bowl, whisk together all dry ingredients: 40 g of wholewheat flour, 40 g of all-purpose flour, 1 g of ground cinnamon, 1 g of ground cardamom, and 2 g of fine salt.
  3. In a mixer bowl, beat together the eggs, milk, maple syrup, vanilla extract, on high speed for about 1 minute.
  4. Add dry ingredients to the mixer bowl, and mix util all ingredients are combined.
  5. Quarter the apple, remove the core, and thinly slice.
  6. Melt the butter in a medium-size cast iron skillet over medium heat. Add the apple, and cook occasionally stirring, until the butter starts to brown and apple starts to caramelize, for about 5 minutes.
  7. Transfer the apples to a plate, but leave the butter in the skillet.
  8. Pour the batter to the hot skillet, arrange half of the apples on top of the batter, stash the rest.
  9. Bake uncovered in the oven, until the Dutch baby is puffed up and browned on top, for about 15 minutes. (Do not open the oven — it may deflate the Dutch baby.)
  10. Serve topped with the remaining apples, a drizzle of maple syrup, and fresh brerries.
