This is one of our favorite weekend breakfast recipes. You could use any bread you like with it, our favorites are our own zucchini bread (baked the evening before), or pures hafer from Zeit für Brot or any other nice bread. Very easy and quick to make.

Yields 2 portions

  • 2 avocados
  • 1 tomato
  • ½ onion
  • 1 chili
  • 2 limes
  • 3 sprigs of parsley

For the sandwiches

  • bread
    of your choice
  • 1 package of smoked salmon

To make the guacamole

  1. Peel avocados (cut all the way around the stone using a paring knife, then remove the stone and scoop the flesh using a spoon), put them into a medium-sized bowl, and smash them using a small masher or a fork.
  2. Halve the tomato, remove the root and cut into 1/4 cm cubes, put into a bowl with avocados.
  3. Peel the onion and cut 1/2 into small dice, add into the bowl.
  4. Quarter the chili lengthwise, remove the seeds, thinly slice each quarter, and add the chilies into the bowl.
  5. Discard large stems of the parsley and finely chop the rest, add the chopped parsley into the bowl.
  6. Juice one lime into the bowl.
  7. Add salt, and thoroughly mix everything.

For the sandwiches

  1. Slice the bread.
  2. Spread guacamole over each slice of bread.
  3. Put a few slices of salmon on top of each sandwich.
